Cooking With Rotisserie Chicken: Cordon Bleu Chicken Bites

I live in the south, and down here, college football is a way of life for most people. From kickoff to the very last second of every game, people everywhere can be found glued to their television screens, rooting for their favorite team. They flood the grocery stores, buying snacks and drinks for parties and get-togethers. They fill Facebook with football related posts all throughout every game. And in Alabama, where I live, shouting “Roll Tide!” is perfectly acceptable in almost any setting. Of course, when my friends who are Auburn fans read this, they will inevitably be shouting, “War Eagle!” But I digress… it’s all in good fun, and most people absolutely love their football. And I can assure you, they will ALL get settled in tonight to watch the College Football National Championship game!

I’m rooting for Alabama, by the way! Roll Tide!!

So, with this big game going on tonight, and the Super Bowl not far ahead of us, I thought it to be a great time to make these really awesome chicken bites!

Y’all… There are a gazillion things you can make with rotisserie chicken. And when you can buy a whole cooked chicken for cheaper than a whole raw one, why not? So, I have been thinking of ways to put a twist on our chicken dishes and make them with rotisserie chicken!

Since it’s game day, I am preparing Cordon Bleu Chicken Bites. These things are SO Good!! And they’re easy to make, so you will love them!

Ingredients:
Rotisserie Chicken
Crescent Rolls (2-3 Cans)
Dijon Mustard
Ham Chunks
Swiss Cheese (I used sandwich slices and cut it into small squares.)

Preheat the oven to 375°. Roll out your crescent rolls and separate. At the large ends, squirt a little Dijon mustard. Add a bite or two of chicken, a couple of ham chunks, and some Swiss cheese. Wrap the sides up around the ingredients, and roll it into a little ball. Bake on a cookie sheet for about 10 to 12 minutes, or until golden brown. YUM!!
